Watermelon Fruit Mandala

What could be simpler than this Watermelon Fruit Mandala?  Sometimes it’s just unnecessary to over complicate things. Fresh fruit is such a riot of colour and contrast of flavour and textures that it simply does it by itself.

Just buy a medium sized watermelon and a selection of contrasting fruit.  Slice your watermelon right down the middle and cut a  large disc off each side to make two ‘plates’ on which to arrange the fruit. The rest is obvious, but what could be prettier than a personalised mandala of fruit for each person almost like individual bouquets.

A perfect healthy dessert after any meal or even for a special breakfast.

The result looks almost too good to eat, but if you drizzle over a little tot of lemon cello it makes it almost irresistible!
