Here’s a very simple, no fuss way to make an Incredibly Quick and Tasty Toasted sandwich in five minutes as you assemble it. You put it together and as the first side is toasting, you add the filling and it softens and warms through as you gently add the layers. There is so much scope for experimenting with exciting combinations of flavour and no reason why you shouldn’t just enjoy your favourite ones too.

Ingredients
- You will need:
- 2 Slices of your favourite bread (not too thickly sliced)
- Fillings of your choice, opportunities are endless here, but it's a great way to use whatever bits and pieces you have in the fridge.
- I used a small avocado and some feta cheese with a squeeze of lemon juice and some little gem lettuce leaves (all my favourites!)
- Some cherry tomatoes to serve at the side (If you're lucky enough to grow them, just picked from the plant)
- Some Homemade Healthy Butter and Olive Oil spread
Instructions
- First butter one piece of bread on both sides and place in the centre of a small frying pan on a gentle heat.
- Then start to gently add your fillings, working quite quickly and taking care not to burn yourself on the edge of the heating pan as you go.
- Butter the second piece of bread on both sides also and carefully place it on the on top, gently pressing downwards to make sure it all starts to stick together.
- By this time your sandwich is ready to be turned over, first jiggle it a bit to loosen it, tilt the pan and gently lift it over using a spatula, taking care that it stays squashed together.
- When your sandwich is golden brown on both sides, it's done and ready to served with the accompanying salad garnish of your choice.
- As you can see, it's not rocket science, but sometimes I think we get bogged down with gadgets and gizmos and forget that good food can still be so very simple!
