I am a great believer in using everything up, and as I can’t stand waste, I get a lot of satisfaction from knowing that nothing has been thrown away. So over the past few weeks I have been busy trying to use up every last fruit from the harvest in my garden. This Golden Pear Cake is a double hit, as it uses up fresh pears on the top and some Spiced Harvest Mincemeat inside too, which I had already made with all the garden apples and pears.

Ingredients
- 1 cup of light olive oil
- 1 cup of natural yoghurt
- 1 cup of light brown sugar
- 2 free range eggs
- 1 cup of spiced harvest mincemeat
- 1 tsp of vanilla essence
- A handful of chopped walnuts
- 2 cups of self raising flour
- 1 tsp baking powder
- pinch of sea salt
- 1 tsp cinnamon
- 4 - 6 pears peeled and sliced
- 2 tbspns of soft brown sugar and ¼ cup of butter to line the base of the pan.
Instructions
- Grease and line an 18cm cake tin and preheat the oven
- In a large bowl whisk together the oil, eggs, yoghurt and brown sugar into a light frothy mixture.
- Stir in the mincemeat and walnuts
- Sift in the four, baking powder, cinnamon and salt stirring thoroughly.
- Give the bottom of the lined tin a generous rub of butter and then sprinkle with brown sugar to line the tin.
- Working quickly, peel and slice the pears and arrange them on top of the brown sugar and butter base.
- Then pour the cake batter on top of the pears.
- Bake in the centre of oven gas mark 5 / 190 c for around 45mins or until the cake has risen well and is firm to touch. To double check, you can test with a skewer to see if it comes out clean.
- Remove from the oven, allow to cool so it's easier to handle and slide a knife around the tin, then place a serving plate on top of the tin and invert the cake, straight on to a serving plate.
- This is delicious served warm with creme fraiche as a dessert, or as a welcome tea-time treat the next day, but it won't last long!
