Try this Glorious Fish pie it’s makes a super healthy dinner into an extra special dish!
Fish Pie has a bit of a sensible image which is a shame because it’s such a healthy dish and with a few tweaks, you can make a very special meal that’s packed with goodness. To increase the health benefits try adding extra vegetables in the form of a layer of spinach at the bottom and some sweet potatoes and cauliflower to the mash.

Ingredients
- These ingredients serve 6 people generously.
- For The Fishy Base
- 300g chunky white fish (cod or haddock are fine) cut into small chunks
- 300g of lightly smoked fish (salmon or haddock would do)
- 400g bag of frozen mixed seafood (fresh seafood would be perfect, but not always available)
- 3 rashers of bacon or pancetta (optional)
- 1 large finely chopped onion
- 1 large finely chopped garlic
- 1 medium leek
- 30 g butter
- ½ cup white wine
- ½ cup good stock (chicken or vegetable)
- 1 heaped tbsp plain flour
- ½ cup of creme fraiche
- freshly ground salt and black pepper
- handful of fresh chopped parsley
- 4 good handfuls of washed baby spinach leaves
- For The Mash Topping
- 500g Potatoes
- 1 large sweet potato
- 1 small trimmed cauliflower
- 50 g butter (you could use a extra virgin olive oil instead)
- 50 ml milk
- 50g grated parmesan
- a sprinkle of dried garlic powder
- salt and black pepper
Instructions
- First peel and quarter the potatoes and place them in a large pan of boiling water.
- After the potatoes have been cooking for 10 minutes add the peeled and quartered sweet potato.
- minutes later add the cauliflower florets as these cook quite quickly.
- Once the cauliflower is just tender and before the potatoes are too soft, drain the vegetable in a colander. Allow to stand for a few minutes.
- Turn the veg back into the large pan and add the butter, milk, half the parmesan and seasoning.
- Mash the vegetables with all the lovely seasonings.
- Don't worry about getting a smooth finish, a bit of texture makes it more interesting.
- While the potatoes are cooking you can be getting on with the fishy part.
- Take another large pan and soften the onions and garlic in a little light oil over a gentle to medium heat.
- Add the finely chopped bacon or pancetta and sliced leek and add the butter.
- At this point add the mixed seafood ( only if it is frozen, not if you are using fresh as then it only needs a few minutes to cook.)
- Scatter over the flour and stir until it is absorbed.
- Gradually add the stock and wine, stirring as you go.
- Season with salt and pepper (have a taste, it may not need much salt)
- Add the fish pieces and gently stir in the creme fraiche, being careful not to break up the fish.
- Don't over cook the fish, it doesn't need longer than 5 minutes.
- Cover and remove from the heat.
- Now you are ready to build your fish pie.
- Take a large roasting pan and spoon in some of the fish mixture, just enough to cover the base.
- Squeeze the water from the uncooked spinach leaves and arrange them in a layer over the fish base.
- Spread the rest of the fish mixture on top.
- Now spoon the mashed vegetable over the fish and smooth over with a fork - you don't have to be too neat!
- Finally sprinkle over the second half of the parmesan on top.
- Cook in the top of a hot oven gas mark 7 / 220 C for 30 mins, until the top turns golden and start to crisp.
