Recipe type: Chocolate Brownies
Cuisine: Baking
Serves: 16
  • 75g (3 oz) Organic oats
  • 100g medjool dates, pitted and roughly chopped
  • 125g (41/2 oz) organic butter (or coconut oil)
  • 75g (3 oz) organic cocoa powder (I used Green & Blacks)
  • 2 free-range eggs
  • 3 tbsp wild honey (make sure its pure and not a blend)
  • 3 tbsp natural yoghurt ( or almond/rice milk)
  • 1 tsp baking powder
  • 1 tsp vanilla essence ( or just scoop the seeds straight from a pod)
  • A handful of roughly chopped toasted, hazelnuts or good quality dark chocolate wouldn't go amiss!
  1. Preheat the oven to 180C (fan 160C) Gas mark 4.
  2. Grease and line an 8 in square tin in advance.
  3. Blend the oats first until they resemble a fine, light flour.
  4. Add the rest of the ingredients and blend well, except the nuts or chocolate chips which you add last to the fudgey mixture and stir in.
  5. Spoon the brownie mixture into the lined tin, and smooth the mixture out even with the back of a spoon.
  6. Bake for 15 mins, or until the surface feels firm on top but still bit gooey inside.
  7. Remove from the oven, allow to cool for a few minutes before slicing into squares.
