Caramelised Onion And Feta Tartlets

Caramelised red onion and feta cheese tartlets, perfect to serve with aperitifs or as part of a light buffet.

  • 4 medium red onions
  • 2 tbsp Light olive oil
  • 25g butter
  • 2 tbsp balsamic vinegar
  • A light sprinkle of sugar
  • A generous tsp of salt
  • 1 ready rolled sheet of puff pastry
  • 1 beaten egg for glaze
  • 80g crumbled feta cheese
  1. Finely slice the red onions and sauté them gently in the oil and butter, add the balsamic vinegar, sugar and salt when they begin to soften and allow them to cook gently while you prepare the pastry cases, stirring occasionally until they look soft, sticky and glossy.
  2. Unroll out the pastry and cut the sheet into 2' squares, it should make around 30
  3. Lay them spaced a little apart, on a baking sheet lined with grease proof paper
  4. Take an ordinary knife and score a smaller square shape 1cm inside each pastry square. only score it, don't actually cut it through.
  5. Brush the pastry squares with beaten egg and place them in a medium hot oven gas 7 / 200 C until they have puffed up and turned golden brown.
  6. When they are ready, remove them and taking a small sharp knife, gently cut around the squares that you made on the inside, cutting through the top layer of puff pastry. Then gently push the squares down to the bottom to make little square shaped holes.
  7. Place a little crumbled feta inside each little square, and then spoon in a little pile of onions on top.
  8. Don't worry if they tumble out a bit, this adds to the homemade charm!
  9. Serve immediately, or allow to cool and reheat in a gentle oven to serve later.
