Dark velvety chocolate and juicy tangy berries are a match made in heaven, they compliment each other perfectly in this quick and easy recipe for Chocolate Berry Trifles. This simple dessert recipe only needs some basic ingredients and a few minutes to put together – it’s always a crowd pleaser.

Easy peasy Chocolate Berry Trifles are a great way to use up muffins or left over cake, and always go down well at any dinner party.

Ingredients
- 4 dark chocolate muffins or a small chocolate loaf cake ( homemade would be nice, but good quality shop bought is also fine )
- 1 bag of mixed frozen berries
- 3 tbsp of raspberry (or other dark berry) jam
- 3 capfuls of a fruity liqueur
- 1 250g tub of mascepone
- 1 300ml pot of double cream
- 1 100g bar of dark chocolate (at least 80%)
- One large glass trifle bowl ( it's so nice to see the layers underneath!)
- Or divide the ingredients between 6 ramekins or individual glass dessert dishes.
Instructions
- First put the berries in a bowl and trickle over the liqueur, allow them to steep for a while.
- Then slice up the cake or muffins and spread each piece with a blob of jam.
- Gently melt the chocolate in a bowl over a pan of simmering water ( reserving one small square to grate on top of your finished trifle.)
- Line the bottom of the bowl or dishes with the jammy cake, and then spoon the boozy berries over the cake, making sure to trickle the liquid evenly.
- In another bowl, whisk the double cream until it gently peaks and then take half of the whipped cream and set it aside to put on top of the finished trifle.
- Then blend in the mascepone with the rest of the cream. This may be quite stiff at first, but just break it up with a fork until it loosens sufficiently to be able to whisk and blend it together.
- Stir the melted chocolate into the creamy mixture and gently whisk until there are no streaks and you have a satin smooth chocolate cream.
- Spoon it into the trifle bowls evenly over the fruity layer. Allow the chocolate cream to stand and firm up a little before spreading the reserved cream over the top and finally finishing off with the grated chocolate spinkles to decorate.
