Chocolate Banana Bread : Gluten Free

This is not the first banana bread recipe on this blog, but it deserves to be here simply because it’s rich, moist chocolatiness just has to be shared. It’s a gluten free, chocolate banana bread made with raw cacao, natural fruit sugars and coconut oil, so you can eat it happy in the knowledge that it’s truly nourishing.

If you have a food processor this tea time treat can be whizzed up in minutes, but if you don’t  there’s nothing a masher, a whisk and a bit of elbow grease can’t handle. Then pop it in the oven for around half an hour and serve it warm with a nice cuppa!

Ingredients
  • 4 bananas (3 mashed, leave one whole)
  • 8 medjool dates
  • ½ cup raw cacao powder ( good quality cocoa powder is fine, just not as high in antioxidants)
  • 2 eggs
  • ⅓ cup melted coconut oil
  • 1 cup of natural yoghurt
  • 2 cups buckwheat flour
  • 1 tsp baking powder
  • Generous handful of crushed walnuts
Instructions
  1. This recipe uses a 250ml cup measure.
  2. Place 3 of the bananas and the dates into the food processor, and pulse until they are mashed together. The dates blend better if they have been previously soaked for a while in a little warm water.
  3. Crack in the eggs and blend.
  4. Add the melted coconut oil and yoghurt.
  5. Sift in the buckwheat flour, cacao and baking powder.
  6. Scatter in the walnuts.
  7. Pour into a lined loaf tin,
  8. Slice the last banana lengthways and nestle it on top of the mixture, with the cut side facing up.
  9. Drizzle a little maple syrup, along the banana to make them glisten.
  10. Bake in a medium oven for around 30 mins, or until a testing skewer comes out clean from the centre.
