It only takes a few minutes to stir up this quick and easy Apple & Coconut porridge. Healthy oats make it low GI and with no added sugar, it’s sweetness comes from the juicy apple. Both warming and delicious, it keeps you going all the way till lunch time.
The recipe is simple; one cup of oats to two cups of water, stirred over a gentle heat until it thickens. Add a pinch of salt, a teaspoon of cinnamon and keep stirring. Grate some solid coconut cream (a good tablespoonful) into the porridge as it cooks which adds a lovely creaminess. Then grate a rosy apple on the coarse side of the grater and stir the grated apple into the porridge, just before you take it off the heat, enough to warm the apple through.
The apple brings it’s natural sweetness along with a little bit of texture and the coconut cream adds a rich creaminess. Serve immediately with a sprinkle of desiccated coconut on top.
